Poor Joel – I don’t think he has had a real birthday cake in several years. Usually we are just finishing Emma’s cake when his birthday rolls around, so he’s had pecan pie, peanut butter pie, mini cheesecakes, cookies and this year – brownie pudding.
From Better Homes and Gardens, Brownie Pudding
-Grease an 8x8x2 pan. Preheat oven to 350°
Mix:
1 cup flour
2 T. cocoa
3/4 cup granulated sugar
2 tsp. baking powder
1/4 tsp salt
Add:
1/2 cup milk
2 T. oil
1 tsp. vanilla
(1/2 cup chopped walnuts listed, but not used)
-Pour into prepared pan.
-In a small bowl, stir together 3/4 cup brown sugar and 1/4 cup unsweetened cocoa powder.
-Stir in 1 1/2 cups bowling water.
-Slowly pour the sugar/cocoa/water mixture over the batter.
-Bake in a 350° oven for 35-40 minutes. Cool on a wire rack for 45-60 minutes. Spoon cake into bowls with vanilla ice cream. Spoon sauce over cake and ice cream.
It was really, really good!
